  • 300 gram Lotus root
  • 100 gram Straw mushrooms
  • 100 gram Abalone mushrooms
  • 100 gram Asparagus
  • 5 slices Galangal
  • 3 plants Lemongrass
  • 1 fruit Chili
  • 2 Tomatoes
  • 600 ml Coconut water
  • 600 ml Filtered water
  • cup Tamarind juice
  • 3 tablespoons Sugar
  • 2 teaspoons Slat
  • 2 tablespoons Vegetarian seasoning powder
  • 4 leaves Lemon
  • 100 gram Lotus rootlet is the youngest part of the lotus leaf stem, located close to the base of the lotus plant. Lotus rootlet It is milky white in color, crispy, and feels cool to the touch.

Instructions
 

  • Prepare ingredients:
    – Lotus root: Wash, peel, cut into small slices, put in a bowl of diluted salt water, wash off the pus, then take out and drain.
    – Mushrooms: Cut off the legs, then wash
    – Galangal: Peel, wash, cut into thin slices.
    Tomatoes: Wash, cut into small pieces
    Other ingredients: Please wash them to ensure food safety.
  • Stir-fry:
    – Put the pot on the stove, add a little cooking oil and turn on the stove
    – Hot oil, add 3 slices of galangal, stir well. Next, add 1 chili, 2 prepared tomatoes, and stir-fry for about 3 – 5 minutes.
  • Cook broth:
    – Put the following ingredients into the pot one by one: 600ml filtered water, 600ml coconut water, 1/3 cup tamarind water and bring to a boil.
    – After boiling, add the following spices: 2 tablespoons sugar, 2 teaspoons salt, 2 tablespoons vegetarian seasoning powder and 4 lemon leaves.
  • Eat hotpot – The cooking steps are completed:
