Lotus Root Salad is a refreshing and nutritious dish that showcases the crisp texture and subtle flavor of lotus root. To prepare this delightful salad, start by peeling the lotus roots and slicing them thinly to prevent browning. Then, soak the slices in lime juice for about 10 minutes to maintain their vibrant color. Meanwhile, remove the bitter core from lotus seeds and rinse them thoroughly. Wash and chop your choice of greens into bite-sized pieces. Additionally, peel and julienne cucumber, carrot, and Onions. Once all ingredients are ready, mix them together in a bowl, toss gently. This salad offers a delightful combination of textures and flavors, perfect for a light and healthy meal or as a refreshing side dish.

Ingredients
  

  • 400 gram Lotus root
  • 100 gram Lotus seeds
  • ½ fruit Cucumber
  • ½ fruit Carrots
  • ¼ bulb Onion
  • 1 fruit Green Apple
  • Celery 1 little
  • 250 gram White tofu
  • 2 teaspoons Roasted sesame
  • 3 purple Onions
  • 1 tablespoons Apple cider vinegar
  • 1 little Lemon juice
  • 2 tablespoons Cooking oil
  • 1 tablespoons Malt sugar
  • Salt, pepper, a little of each

Instructions
 

  • Preparing vegetables and fruits.
    – Lotus root: Peel and cut into thin slices. To avoid bruising after slicing, soak the lotus root slices in lemon juice for about 10 minutes, wash off the latex, then take them out and drain.
    – Lotus seeds: Remove the inner core (heart) if you don't want to eat bitter lotus seeds. Next, wash and drain.
    – Celery: Wash and cut into bite-sized pieces.
    – Cucumber, carrot and bulb onion: Remove the skin, wash and cut into strips
  • Cook lotus root and lotus seeds:
    – Put the lotus root in the pot, add 500ml of water, turn on the stove and boil.
    – After 15 minutes since the water boils, add lotus seeds and continue to boil for another 10 minutes. Then take it out and let it cool.
  • Fry tofu:
    – Cut in half, then fry both sides until golden brown, then take them out to drain the oil.
    – Use a knife to cut into bite-sized pieces.
  • Mix the sauce:
    – Purple onion, peeled
    – Wash green apples and cut them into small pieces
    – Put everything in a blender, add: 1 tablespoon apple cider vinegar, 1 tablespoon malt sugar, 200ml filtered water, 1/4 teaspoon salt, puree the mixture and put it in a large bowl.
  • Make salad:
    – Put the lotus root, lotus seeds, cucumber, carrot, celery, onion and fried tofu ingredients into a large bowl.
    – Pour the sauce over and mix well.
    – Season to taste.
    – Finally, sprinkle sesame and pepper on top.
