- 1 piece Banana flower
- 100 gram Bean sprouts
- 1 Carrot
- 100 gram Roughly crushed roasted peanuts
- 3 Fresh lemon
- 1 bulb Garlic
- 20 gram Coriander and mint basil
- Other spices: salt, fish sauce, sugar, vinegar…
Instructions
- Prepare banana flowers: – Prepare a bowl of clean water mixed with a little salt and vinegar.– Next, cut the banana flower into very thin slices and soak them in the prepared water basin. The purpose of this step is to remove the bitter and astringent taste of banana flowers, and at the same time help banana flowers retain their white color, crisp taste, and not darken. On the contrary, if you do not do this step, your dish will not be delicious and unattractive.– When the banana flower has no sap, take it out, wash it with water and place it on a rack to drain.– You can taste the banana flower fiber to see if it has a bitter taste and dark color. If they are dark in color, it's because you didn't soak them enough time or added too little salt.
- Prepare other ingredients: – Carrots: wash, peel and grate into thin, small, long strips.– Bean sprouts: must be washed thoroughly, picking up all their shells during the washing process.– Coriander and mint: Pick up the young stems, wash them, pat dry and chop them finely.– Peeled garlic, minced,– Chili: Cut into pieces

- 2 tablespoons Salt
- 2 chilli
- 2 Lemon

- Other spices: Fish sauce, salt, sugar, MSG…

- Prepare banana flowers, vegetables and fruits:– Banana flowers: Need to remove the bitter and astringent taste by slicing thinly, soaking in salt and vinegar.– Tofu: Clean by blanching in boiling water, drain, then mash– Peanuts: Roast until the peanuts are evenly browned and not burned.– Carrots: Peel, wash and grate into small strips– Wash bean sprouts and herbs– Chili: cut the stem and cut the fruit in half, remove all the seeds and chop finely.– Chive leaves: Wash and cut into pieces
- Make mixed fish sauce:– Take a ripe pineapple, remove the eyes and skin, then chop it finely or put it in a blender to puree it. Then you put the pineapple in the pan and roast until fragrant, then pour in 2 bowls of filtered water and let the water boil.– When the water boils, add 6 tablespoons of seasoning powder, 2 tablespoons of salt, 4 tablespoons of sugar, and 6 tablespoons of soy sauce and stir well.– Continue cooking for another 5 – 10 minutes until the fish sauce thickens, then stop boiling and let cool. Finally, add finely chopped chili.
